Slow Cooked Sunday Ready for the Monday!
Serves 8 (half the recipe for x 4 serving)
Time: 8 hours
Ingredients:
Pulled Pork:
· 2 kg pork shoulder joint
· X 2 brown onions (diced)
· X 6 garlic cloves (peeled and grated)
· X 3 tbsp reggae reggae sauce
· X 2 tbsp olive oil
· 2 litres pomegranate juice
· X 1 tsp salt
· X 2 tsp cinnamon
· X 2 tsp cumin
Wedges:
· 2 kg potatoes (or sweat potatoes work just as well) (washed and cut into wedges)
· X 2 tbsp olive oil
· X 2 tsp salt
· X 2 tsp pepper
· X 2 tsp paprika
Coleslaw:
· X 1 small white cabbage (core removed, quartered, and finely sliced)
· X 1 small red cabbage (core removed, quartered, and finely sliced)
· X 2 red onions (finely sliced)
· X 1 red apple (peeled and grated)
· X 3 carrots (peeled and grated)
· 250g fat free yogurt
· Splash of rice wine vinegar (white wine vinegar is also fine)
· X 1 tsp cumin
· X 1 tsp chilli flakes
· X 1 tbsp honey
Special Equipment:
· Slow cooker
Directions:
The night before:
· Combine the garlic, reggae reggae sauce, olive oil, salt, cinnamon and cumin and mix.
· Turn a pan on high heat. Trip the excess fat from the pork joint. Add the pork joint to the pan and brown. Remove from heat and allow to cool
· Baste the pork with the marinade mixture and leave over night
In the morning:
· Layer the bottom of a slow cooker with the onions. Place the pork joint on top and add the pomegranate juice (the joint should be complete submerged). Add more juice or water if required
· Put the slow cooker on for 8 hours on medium
1 and a half hours to go:
· Pre heat the oven to 200 degrees. Place the potato wedges at the bottom of a tray (use two if required) and spread them evenly out (the more space between the potatoes, the better they will cook). Add the olive oil, salt, pepper and paprika to the potatoes and mix until coated. Place in the oven and cook for 1 – 1.15 hours. Make sure you give the potatoes a good shake around during cooking to ensure the whole potato cooks nice and crispy
· Whilst the potatoes are cooking away combine the cabbages, onions, apple, carrots, yogurt, rice wine vinegar, cumin, chilli flakes and honey. Mix thoroughly.
10 minutes to go:
· Remove the pork from the slow cooker and shred into a bowl removing any excess fat in the process. Add a small splash of the cooking juices and give it a good mix
· Serve the pork with the potatoes and coleslaw
Tips
· Pulled pork is a diverse meat and once cooked can be added into buns, sandwiches, the list goes on!
· Pomegranate juice isn’t always the easiest to get hold of. Alternatives include: cranberry juice, apple juice, orange juice
